Saint-Tropez and the surrounding towns (Port Grimaud & Saint Maxime) are lovely and would recommend but they are also on the pricey side, so worth bearing in mind!
Get the ferry across from St Maxime to St Tropez, a great 25 minute trip. In St Tropez, eat in the streets a couple of streets back from the front, much cheaper.
Nice is bustling and busy, plenty to see and do. Catch the train to Monaco and have a walk around, hire a Ferrari and drive around the GP circuit (about 140 Euros the last time I went). Jump back on the train and head across the border to San Remo.
Heading back West, Antibes has a great Waterpark if that's your thing.
Further West is a lovely resort called Le Lavandou. Very French, very pretty and a lot cheaper than the more touristy resorts.
Inland, the Gorge of Verdun is spectacular, hire a Kayak and see it from the water.
Shopping for a lady, head up to Grasse, the home of French perfume. Lots of tours around the 'factories' available.
If you're heading down towards the Spanish border, Collioure is beautiful.

Never been to France but I’d recommend south Portugal.

Following England I assume? I bet that would be very different?
I've decided to fuck off to the south of France for a week or 2, maybe more/less. Any recommendations of where to visit/avoid, I have literally decided just this second, open to all ideas, and willing to travel to neighbouring countries.

Plus one for Carcasonne.
Depends what you like in a holiday. St Paul du Vence, Mende, Gorge Du Tarn. Annecy is stunning. And for a very moving experince you must take in Oradour Sur Glane, destroyed by the Nazis and most of the town massacred. Remains exactly as it was, with rusting cars and destroyed buildings.
