I love a Gaelic coffee but always struggle to get the cream to float properly

It's getting harder and harder to get a decent Gaelic coffee when you're out.
I've had some truly appalling efforts in the last year ot two and was told in an O'Neills that none of the staff knew how to make one!

Easy. make your coffee as you would like. Give it a stir to agitate contents, then using that same warm spoon, pour the cream over the back of the said spoon but don't stir it in. Thicker cream works best, i.e. double cream or whipping cream. Check out this YouTube video:
