I just wanted to share as I've been well proud of myself and hoping by end of the year to have the confidence to cook for her mother.

Cá hấp - steamed fish, we chose a golden pompano. It is steamed with long sliced green onion and ginger, with pâté spread on toasted bánh mì

Chả cá thăng long - tumeric and dill fish, for this we used whiting. Fried in a sizzling pan with onion and served with a fermented shrimp paste sauce. Also featuring steam clams and lobster. Brown/red rice as a change of pace. Pickled carrot & daikon. Chili paste. Blanched crunchy bok choy vegetable.

Not that it matters, do i take it that your wife and her mother are Vietnamese? What a lovely warm people they are - and this food looks absolutely exquisite. Good job!

There are several Asian supermarkets in my local area here in Atlanta, USA. Bought already cleaned and ready to cut and cook.

Anything you want from beef, chicken, whole goat, whole lamb, shellfish, Asian fish and seafood (fresh, live), Vegetables and fruits not found in ordinary American markets, seasonings, etc.

A sour sweet soup made from a stalk called an elephant ear? If so, yes, and extremely tasty. It's on my to do list for next week I think.
Ca tai tuong chien. It's deep fried, then they stand it up in a plate rack and you attack it with chopsticks to take the flesh off.
It's giant gourami - which might be known in your neck of the woods as golden redfish.
It's amazing!

Not a Dundee cake, Wingy, just a dead easy cake with mixed fruit (or whatever main fruit you want). Just having dinner so I'll post it up in a bit.

Tonight's meal was simpler and way less prep.
Gà Nướng Sả - A lemongrass garlic chicken served with rice noodle and the assorted usual suspect side vegetables.
Nước chấm - a commonly used vinegar condiment including fish sauce, chili pepper, garlic, for dipping your meat or veggies or drizzling atop the plain rice noodl3.
